A strata is a cross between french toast and bread pudding.
It normally calls for day old french bread and can be savory or sweet. This version uses chicken apple sausage and whole wheat bread. It is quick, easy and you can make it the night before! Simply pop it in the oven while brewing a pot of coffee in the morning.
Feel free to add additional ingredients such as chopped mushrooms, kale, quinoa or whatever your tastebuds desire!

- 6 Slices of sprouted wheat bread, crusts optional I used Alvarado’s street bread
- 1 sausage, thinly sliced crosswise, I used an Aidells Chicken Apple Sausage
- 1/2 cup red onion, chopped
- 1 cup of shredded cheddar, light 2%
- 3 Tbsp Olive Oil, Extra Virgin
- 2 eggs
- 1 cup of milk, fat free
Preheat oven to 350 F.
Lightly butter or use a non-stick cooking spray to cover bottom and sides of an oven proof baking dish.
Over medium heat, lightly brown in 1 tbsp olive oil the onions and sausage for 5 to 8 minutes. Set aside.
Assemble the strata by placing three slices of bread down. Layer with half of the onion-sausage mixture. Layer 1/4 cup of shredded cheese. Layer the remaining onion-sausage mixture and a 1/4 cup of cheese. Top with remaining three slices (Option to lightly butter or spray with olive oil. I lightly spritzed my slices with extra virgin olive oil).
Blend together, eggs and milk. Slowly pour evenly over strata.
Top with remaining 1/2 cup of cheese.
Cover and chill for 1 hour or overnight.
Bake in a 350 *F oven for 30 to 40 minutes or until the top is golden brown and mixture is set.
